Crispy Baked Chicken Tenders with Dip

1 lb chicken tenders

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1 tsp salt

½ tsp black pepper

Cooking spray or olive oil

For the Dipping Sauce:

½ cup Greek yogurt

2 tbsp mayonnaise

1 tbsp Dijon mustard

1 tbsp honey

1 tsp lemon juice

Salt and pepper to taste

Fresh chopped parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray it with cooking spray or brush with olive oil.

    Prepare the Breading Station: In three separate bowls, set up your breading station. In the first bowl, put the flour. In the second bowl, whisk the eggs until fully combined. In the third bowl, mix the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.

      Bread the Chicken Tenders: Take each chicken tender and dredge it in the flour, shaking off any excess. Then dip it into the egg mixture, allowing any excess to drip off. Finally, coat it in the panko breadcrumb mixture, pressing gently to adhere the crumbs. Place the breaded chicken tenders on the prepared baking sheet.

        Spray for Crispiness: Once all the chicken tenders are coated, lightly spray the tops with cooking spray or drizzle with a bit of olive oil. This helps them get extra crispy in the oven!

          Bake the Tenders: Bake the chicken tenders in the preheated oven for 15-20 minutes, flipping halfway through, until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C).

            Prepare the Dipping Sauce: While the chicken tenders are baking, mix together the Greek yogurt, mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper in a small bowl. Adjust seasoning to taste. You can also fold in some chopped fresh parsley for added freshness and color.
