2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes, drained

1 cup heavy cream

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1 cup fresh basil leaves, chopped

8 oz pasta (penne or fettuccine work well)

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side until cooked through and golden brown. Remove from the skillet and let rest for a few minutes before slicing into strips.
