Creamy Tomato Basil Chicken Bake

4 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon dried Italian seasoning

1/2 cup heavy cream

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1/4 cup fresh basil, chopped (plus extra for garnish)

Salt and pepper, to taste

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the chicken: Season the chicken breasts with salt and pepper on both sides. Place them in a greased 9x13-inch baking dish.

      Sauté the aromatics: In a skillet over medium heat, add olive oil. Once hot, stir in minced garlic and sauté for about 1 minute until fragrant (do not let it burn).

        Add the tomatoes and seasoning: Toss in the halved cherry tomatoes and dried Italian seasoning into the skillet. Sauté for 3-4 minutes until the tomatoes are slightly softened.

          Make the creamy sauce: Reduce heat to low and pour in the heavy cream. Stir until combined, then add half of the mozzarella and all of the Parmesan cheese. Mix until the cheeses are melted and creamy.

            Combine with chicken: Pour the creamy tomato mixture over the chicken in the baking dish. Sprinkle the remaining mozzarella on top.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temp of 165°F/74°C) and the cheese is bubbly and golden.

                Garnish and serve: Once baked, remove from the oven and let it rest for a few minutes. Garnish with fresh basil before serving.
