2 tablespoons olive oil

4 cloves garlic, minced

5 ounces fresh spinach (about 6 cups)

1 cup heavy cream or coconut cream for a vegan option

1/2 cup grated Parmesan cheese (omit for vegan)

Salt and pepper to taste

1 teaspoon lemon juice

1/4 teaspoon red pepper flakes (optional)

1/4 cup walnuts or pine nuts, toasted (for garnish)

Fresh herbs (like parsley or basil) for garnish

Cook the Quinoa: In a saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil over medium-high heat.
