1 cup wild rice blend

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

1 pound boneless, skinless chicken breasts, diced

6 cups chicken broth

1 cup heavy cream

1 cup fresh spinach, chopped

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Cook the Wild Rice: Begin by rinsing the wild rice under cold water. In a medium saucepan, combine the wild rice blend with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes or until tender. Once done, drain any excess liquid and set aside.

    Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, cooking for 5-7 minutes, or until the vegetables begin to soften. Stir in the minced garlic, thyme, rosemary, salt, and pepper, cooking for an additional 1-2 minutes until fragrant.

      Cook the Chicken: Add the diced chicken breasts to the pot, stirring to coat with the vegetable mixture. Cook for about 5-7 minutes, or until the chicken is no longer pink.
