12 oz (340 g) pasta (fettuccine or penne)

2 tablespoons olive oil

1 lb (about 450 g) boneless, skinless chicken breasts, diced

Salt and pepper, to taste

3 cloves garlic, minced

1 cup (240 ml) chicken broth

1 cup (240 ml) heavy cream

1 cup (90 g) grated Parmesan cheese

4 cups (about 120 g) fresh spinach leaves

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional)

Fresh basil, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the diced chicken, season with salt and pepper, and sauté for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and bring to a simmer, scraping any browned bits from the bottom of the skillet.

        Make it Creamy: Reduce the heat to low, then stir in the heavy cream and Parmesan cheese. Mix until the cheese has melted and the sauce is creamy.

          Incorporate Spinach: Add the fresh spinach to the skillet, cooking for about 2-3 minutes until wilted. Return the cooked chicken to the skillet and mix everything together.

            Combine with Pasta: Add the cooked pasta to the skillet, tossing well to combine everything. If the sauce is too thick, add a little reserved pasta water, a tablespoon at a time, until you reach the desired consistency. Season with Italian seasoning and red pepper flakes, if using.
