8 oz (225g) penne or fusilli pasta

2 tablespoons olive oil

1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

Salt and black pepper to taste

3 cloves garlic, minced

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) fresh spinach, roughly chopped

½ cup (50g) grated Parmesan cheese

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    Bring a large pot of salted water to a boil. Cook the penne or fusilli pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Chicken:

        In a large skillet over medium heat, heat olive oil. Season the chicken pieces with salt and black pepper. Add the chicken to the skillet and cook for about 5-7 minutes, until golden brown and cooked through. Remove and set aside.

          Aromatics and Flavor:
