Creamy Chicken and Broccoli Pasta Bake

2 cups uncooked pasta (penne or fusilli work great)

2 cups cooked chicken, shredded (rotisserie chicken is perfect)

2 cups broccoli florets (fresh or frozen)

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup heavy cream

1 cup chicken broth

2 cloves garlic, minced

1 tsp onion powder

1 tsp garlic powder

1 tsp Italian seasoning

Salt and pepper to taste

2 tbsp olive oil

½ cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.

      Blanch the Broccoli: In the same pot, add the broccoli florets and cook in boiling water for 2-3 minutes until bright green. Drain and transfer to a bowl of ice water to stop the cooking process. Drain again.

        Prepare the Sauce: In a large pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Stir in the chicken broth, heavy cream, onion powder, garlic powder, Italian seasoning, salt, and pepper. Bring to a simmer.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta, shredded chicken, blanched broccoli, and the creamy sauce. Mix well until everything is evenly coated.

            Add Cheese: Fold in 1 cup of mozzarella cheese and ½ cup of Parmesan cheese, reserving the remaining cheese for topping.

              Prepare to Bake: Transfer the mixture into a greased 9x13 inch baking dish. Sprinkle the remaining mozzarella and Parmesan on top. If desired, sprinkle breadcrumbs over the cheese for an extra crunch.

                Bake: Place in the preheated oven and bake for 25-30 minutes or until the top is golden and bubbly.

                  Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh chopped parsley before serving.
