Ingredients

1 French baguette, sliced into 1/2-inch rounds

8 oz Brie cheese, sliced

1 cup fresh cranberries, rinsed

1 medium apple (such as Granny Smith or Honeycrisp), diced

1/3 cup honey

1/4 cup chopped walnuts (optional)

1 tbsp fresh rosemary, finely chopped (or 1 tsp dried rosemary)

2 tbsp olive oil

Salt and pepper to taste

Balsamic glaze (for drizzling)

Instructions

Prepare the Crostini: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and lightly brush each side with olive oil. Bake in the preheated oven for about 5-7 minutes, or until golden brown and crispy. Remove from oven and set aside.

Make the Cranberry Apple Topping: In a small saucepan over medium heat, combine the fresh cranberries, diced apple, honey, and a pinch of salt and pepper. Cook for about 5-10 minutes until the cranberries have burst and the mixture is juicy. Stir in the chopped walnuts and rosemary, and let it simmer for another 2 minutes. Remove from heat and allow to cool slightly.

Assemble the Crostini: On each toasted baguette slice, layer a slice of Brie cheese. Top generously with the warm cranberry-apple mixture.

Garnish and Serve: Drizzle a small amount of balsamic glaze over the crostini for added flavor. Serve immediately while warm, or you can place them back in the oven for a quick heat-up for about 2 minutes before serving.

Enjoy: These crostini are perfect as an appetizer or a festive addition to any holiday spread!
