2 cups mashed sweet potatoes (about 2 large sweet potatoes)

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup evaporated milk

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 pre-made 9-inch pie crust (store-bought or homemade)

Optional: whipped cream for serving

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Sweet Potatoes: If you're using fresh sweet potatoes, peel and cut them into chunks. Boil in a pot of water until tender, about 15-20 minutes. Drain and mash until smooth. Let cool slightly.

      Mix the Filling: In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until everything is well combined and smooth.

        Fill the Pie Crust: Pour the sweet potato mixture into the prepared pie crust, spreading it evenly.

          Bake: Place the pie in the preheated oven and bake for 45-50 minutes, or until the filling is set and a knife inserted into the center comes out clean. The edges of the crust should be golden brown.

            Cool the Pie: Remove the pie from the oven and allow it to cool on a wire rack for at least 2 hours to set further.

              Serve: Slice and serve your sweet potato pie at room temperature or chilled. You may also top it with whipped cream if desired.
