400g spaghetti

150g pancetta or guanciale, diced

4 large eggs

100g Pecorino Romano cheese, grated

50g Parmigiano-Reggiano cheese, grated

2 cloves garlic, minced

Freshly cracked black pepper

Sea salt

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.

    Prepare the Sauce Base: While the pasta cooks, in a mixing bowl, whisk together the eggs, Pecorino Romano, Parmigiano-Reggiano, and a generous amount of black pepper. The mixture should be creamy and cohesive.

      Sauté the Pancetta: In a large skillet over medium heat, add the diced pancetta (or guanciale) and sauté until crispy, about 5-7 minutes. Add the minced garlic in the last minute of cooking to avoid burning.

        Combine Pasta and Sauce: Reduce the heat to low, then add the drained spaghetti directly into the skillet with crispy pancetta. Toss to combine and ensure the spaghetti is coated in the rendered fat.

          Create the Creamy Sauce: Remove the skillet from heat. Quickly pour in the egg and cheese mixture, tossing vigorously to combine. The residual heat from the pasta will cook the eggs gently, creating a rich, creamy sauce. If the sauce is too thick, add a bit of reserved pasta water, a tablespoon at a time, to achieve the desired consistency.

            Serve: Plate the spaghetti carbonara immediately, garnishing with additional grated cheese, freshly cracked black pepper, and a sprinkle of chopped parsley.
