Classic Chicken Fried Rice

Ingredients
  

2 cups cooked jasmine rice, chilled

1 lb boneless, skinless chicken breast, diced

2 tablespoons soy sauce

1 tablespoon oyster sauce

2 teaspoons sesame oil

1 tablespoon vegetable oil

3 cloves garlic, minced

1 cup mixed vegetables (carrots, peas, corn)

3 green onions, chopped (white and green parts separated)

2 large eggs, lightly beaten

Salt and pepper, to taste

Instructions
 

Prepare the Rice: If using freshly cooked rice, spread it on a baking sheet and refrigerate for at least 30 minutes to cool and dry out slightly. This helps prevent clumping in the fried rice.

    Marinate the Chicken: In a medium bowl, combine the diced chicken with 1 tablespoon of soy sauce and a pinch of salt. Let it marinate for about 15 minutes while you prepare the other ingredients.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through and golden brown, about 5-7 minutes. Remove from the pan and set aside.

        Scramble the Eggs: In the same skillet, add a little more oil if needed, then pour in the beaten eggs. Scramble them until fully cooked, then transfer to a plate and set aside.

          Sauté Aromatics: In the same pan, add another tablespoon of vegetable oil. Add the minced garlic and the white parts of the green onions. Sauté for about 30 seconds until fragrant.

            Add Vegetables: Toss in the mixed vegetables and stir-fry for another 2-3 minutes until they are tender but still vibrant.

              Combine Ingredients: Return the cooked chicken and scrambled eggs to the pan. Add the chilled rice, remaining soy sauce, oyster sauce, sesame oil, and salt and pepper to taste. Stir well to combine all ingredients and heat through.

                Finish with Green Onions: Stir in the chopped green parts of the green onions and cook for another minute. Taste and adjust seasoning if necessary.

                  Serve: Plate the Chicken Fried Rice warm, garnished with extra green onions if desired. Enjoy your delicious homemade fried rice!
