For the Beef Filling:

1 lb ground beef (80/20 for extra flavor)

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp paprika

1/2 tsp oregano

Salt and pepper to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, canned, or frozen)

1/2 cup salsa (plus more for serving)

For Assembly:

6 large flour tortillas (10-12 inches)

2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

1 cup sour cream (for serving)

1 avocado, sliced (for topping)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Beef: In a large skillet, over medium heat, add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5 to 7 minutes.

    Add Aromatics: Stir in the chopped onion and minced garlic. Cook until the onion is soft and translucent, about 3-4 minutes.

      Season the Mixture: Add cumin, chili powder, paprika, oregano, salt, and pepper. Stir well to combine and let the spices cook for about 1 minute to release their flavors.

        Incorporate Beans and Corn: Add the black beans and corn to the skillet. Stir in the salsa, mixing everything well until heated through, about 2-3 minutes. Remove from heat.

          Prepare Tortillas: Warm the tortillas in a dry skillet for about 30 seconds on each side, or wrap them in aluminum foil and place them in a preheated oven at 350°F (175°C) for 10 minutes until pliable.

            Assemble Burritos: Lay a tortilla flat. Spoon about 1/2 cup of the beef and bean mixture onto the center of the tortilla. Sprinkle with 2-3 tbsp of shredded cheese.

              Fold and Roll: Fold in the sides of the tortilla over the filling and then roll up from the bottom, tucking it in as you go to enclose the filling completely.

                Optional - Oven Finish: For a crispy finish, place the rolled burritos seam-side down on a baking sheet, sprinkle with additional cheese, and bake in a preheated oven at 375°F (190°C) for about 10-15 minutes until the cheese is melted and the burritos are slightly crispy.

                  Serve: Serve burritos warm with sour cream, avocado slices, extra salsa, and a sprinkle of fresh cilantro on top.
