2 cups all-purpose flour

1 tbsp baking powder

1 tsp ground cinnamon

1/2 tsp salt

1/4 cup granulated sugar

1 large egg

1 cup milk

2 cups peeled and diced apples (preferably Granny Smith or Honeycrisp)

1 tsp vanilla extract

1/2 cup powdered sugar (for glaze)

2-3 tbsp milk (for glaze)

Prep the Apples: Peel, core, and dice apples into small pieces. Set aside.

    Make the Batter: In a large bowl, sift together the flour, baking powder, cinnamon, salt, and granulated sugar. In another bowl, whisk together the egg, milk, and vanilla extract. Combine the wet ingredients with the dry ingredients until just mixed. Avoid over-mixing – it’s okay if there are a few lumps.

      Fold in Apples: Gently fold the diced apples into the batter until they are evenly coated and dispersed.

        Heat the Oil: In a deep pot or deep fryer, add enough oil (about 2-3 inches deep) to fry the fritters. Heat the oil to 350°F (175°C).
