2 ½ cups sweetened shredded coconut

1 cup sweetened condensed milk

1 teaspoon pure vanilla extract

½ teaspoon almond extract

1/4 teaspoon salt

2 large egg whites

1 cup semi-sweet chocolate chips

1 teaspoon coconut oil (optional, for dipping)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper for easy removal.

    Mix the Coconut Mixture: In a large bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, almond extract, and salt. Stir until well mixed and all the coconut is coated.

      Whip the Egg Whites: In a separate clean bowl, beat the egg whites using an electric mixer on medium speed until soft peaks form. This should take about 2-3 minutes.

        Fold in the Egg Whites: Carefully fold the whipped egg whites into the coconut mixture, being gentle to maintain the volume of the egg whites. Mix until just combined.

          Shape the Macaroons: Using a small ice cream scoop or a tablespoon, scoop out the mixture and form into small mounds (about 1.5 inches tall) on the prepared baking sheet. Leave space between each mound as they will slightly expand.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the macaroons are golden brown on top. Keep an eye on them to prevent over-baking.

              Cool the Macaroons: Once baked, remove the sheet from the oven and let the macaroons cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely.

                  Dip the Macaroons: Once the macaroons are cool, dip the bottom half of each macaroon into the melted chocolate, allowing any excess chocolate to drip off. Place the dipped macaroons back on the parchment-lined baking sheet.

                    Set the Chocolate: Place the dipped macaroons in the refrigerator for about 30 minutes, or until the chocolate has completely set.
