Cheesy Turkey Meatball and Spinach Skillet

1 lb ground turkey

1 cup fresh spinach, chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably whole wheat)

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 tablespoon olive oil

1 can (14.5 oz) crushed tomatoes

1/4 teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Meatballs: In a large bowl, combine the ground turkey, chopped spinach, mozzarella cheese, Parmesan cheese, breadcrumbs, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly combined.

      Form the Meatballs: Using your hands, shape the mixture into small meatballs, about 1.5 inches in diameter. You should get approximately 18-20 meatballs.

        Sauté the Meatballs: In a large oven-safe skillet, heat the olive oil over medium heat. Once hot, add the meatballs in batches (do not overcrowd the skillet) and cook for about 5 minutes, turning occasionally until they are browned on all sides.

          Add the Sauce: Pour the crushed tomatoes over the browned meatballs in the skillet. Stir gently to combine, ensuring the meatballs are coated with the sauce. If using red pepper flakes, sprinkle them in at this stage for a little heat.

            Bake the Skillet: Sprinkle any remaining mozzarella and Parmesan cheese over the top of the skillet. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the meatballs are cooked through (internal temperature of 165°F) and the cheese is bubbly and golden.

              Garnish and Serve: Once out of the oven, let it cool slightly. Garnish with fresh basil leaves if desired. Serve hot with pasta, quinoa, or a side of crusty bread for dipping!
