Ingredients

20 jumbo pasta shells

1 pound ground turkey

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus extra for topping

½ cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 jar (24 oz) marinara sauce

Fresh basil leaves (for garnish, optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the jumbo shells and cook for about 8-10 minutes, until al dente. Drain and set aside to cool.

Prepare the Filling: In a large skillet over medium heat, add the ground turkey and cook until browned, breaking it up with a wooden spoon. Add minced garlic and cook for an additional minute until fragrant.

Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Mix the Cheese Filling: In a large bowl, combine the cooked turkey mixture, ricotta cheese, 1 cup of mozzarella, grated Parmesan, egg, dried oregano, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Preheat Oven: Preheat your oven to 375°F (190°C).

Stuff the Shells: Take each cooked pasta shell and fill it generously with the turkey and cheese mixture. Place the filled shells in a greased 9x13 inch baking dish.

Add Marinara Sauce: Pour the marinara sauce over the stuffed shells, making sure they are well-coated. Sprinkle with the remaining mozzarella cheese on top.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve: Allow to cool for a few minutes, then garnish with fresh basil leaves if desired. Serve warm and enjoy your cheesy turkey and spinach stuffed shells!
