Cheesy Turkey and Broccoli Rice Casserole

2 cups cooked brown rice

1 lb ground turkey

2 cups fresh broccoli florets (or frozen, thawed)

1 cup diced onion

3 cloves garlic, minced

2 cups shredded cheddar cheese

1 cup chicken or vegetable broth

1 cup milk

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

      Add the minced garlic to the skillet, and sauté for another minute until fragrant.

        Increase the heat to medium-high, then add the ground turkey. Cook until browned and cooked through, breaking it apart with a spatula, about 6-8 minutes. Season with garlic powder, onion powder, paprika, salt, and pepper.

          In a large mixing bowl, combine the cooked brown rice, turkey mixture, broccoli florets, chicken or vegetable broth, and milk. Stir in 1.5 cups of the shredded cheddar cheese, mixing well to ensure everything is evenly coated.

            Pour the mixture into a greased 9x13-inch casserole dish.

              Top with the remaining 0.5 cup of cheddar cheese and, if desired, sprinkle breadcrumbs evenly over the top for added crunch.

                Bake in the preheated oven for 25-30 minutes, until the casserole is bubbling and the cheese is melted and lightly golden.
