Cheesy Turkey and Broccoli Casserole

2 cups cooked turkey, shredded or diced

4 cups fresh broccoli florets (or 2 cups frozen)

1 cup uncooked quinoa (or rice)

2 cups chicken or vegetable broth

1 can (10.5 oz) cream of mushroom soup (or homemade)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1 teaspoon dried thyme (optional)

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Prepare Quinoa/Rice: In a medium pot, combine the quinoa (or rice) and chicken (or vegetable) broth. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for about 15 minutes until the liquid is absorbed. Fluff with a fork and set aside.

    Preheat Oven: Preheat your oven to 350°F (175°C).

      Blanch Broccoli: If using fresh broccoli, bring a small pot of water to a boil. Add the broccoli florets and blanch for about 2 minutes until bright green, then immediately transfer them to an ice bath to stop the cooking process. Drain and set aside.

        Combine Ingredients: In a large mixing bowl, combine the cooked turkey, cooked quinoa (or rice), blanched broccoli, cream of mushroom soup, garlic powder, onion powder, black pepper, salt, and dried thyme (if using). Mix well until all ingredients are evenly incorporated.
