Cheesy Chicken & Rice Bake

2 cups cooked rice (white or brown)

1 lb boneless, skinless chicken breasts, diced

1 cup broccoli florets (fresh or frozen)

1 cup shredded sharp cheddar cheese

1 cup cream of chicken soup (or homemade version)

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

½ cup grated Parmesan cheese

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare a Baking Dish: Lightly grease a 9x13 inch baking dish with cooking spray or olive oil.

      Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken, seasoning it with garlic powder, onion powder, paprika, salt, and pepper. Cook for about 5-7 minutes until the chicken is no longer pink, stirring occasionally.

        Mix Ingredients: In a large mixing bowl, combine the cooked rice, cooked chicken, broccoli, cream of chicken soup, and chicken broth. Stir until everything is evenly coated.

          Add Cheese: Fold in the shredded cheddar cheese, reserving about ¼ cup for topping. Mix everything well to ensure the cheese is evenly distributed.

            Transfer to Baking Dish: Pour the chicken and rice mixture into the prepared baking dish, spreading it out evenly.

              Top with Cheese: Sprinkle the reserved cheddar cheese and grated Parmesan cheese evenly over the top.
