2 cups cooked chicken, shredded (about 2 chicken breasts)

2 cups broccoli florets, fresh or frozen

1 cup cooked white rice (or brown rice for a healthy twist)

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (optional, for crisping breadcrumbs)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, steam it until just tender (about 3-5 minutes). If using frozen, microwave it according to the package instructions until thawed and slightly soft. Set aside.

      Make the Creamy Mixture: In a large mixing bowl, combine the cream of mushroom soup, sour cream, shredded chicken, cooked rice, 1 cup of cheddar cheese, Parmesan cheese, garlic powder, onion powder, Italian seasoning, and salt and pepper. Stir until well mixed.

        Combine with Broccoli: Gently fold the steamed broccoli into the creamy mixture until evenly combined.

          Assemble the Casserole: Spoon the mixture into a greased 9x13 inch baking dish, spreading it out evenly.
