Cheesy Beef and Quinoa Casserole

1 lb (450g) ground beef

1 cup uncooked quinoa, rinsed

2 cups beef broth

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes, with juice

1 cup corn (frozen or canned)

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper, to taste

2 cups shredded cheddar cheese (divided)

1/4 cup fresh cilantro, chopped (for garnish)

Instructions
 

Preheat Oven: Begin by preheating your oven to 350°F (175°C).

    Brown Ground Beef: In a large skillet over medium heat, add the ground beef. Break it apart with a spatula and cook until it’s browned, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Vegetables: Add the diced onion and minced garlic to the skillet with the beef. Sauté for another 2-3 minutes until the onion is translucent.

        Combine Ingredients: Stir in the rinsed quinoa, beef broth, black beans, diced tomatoes (with juice), corn, chili powder, cumin, smoked paprika, and salt and pepper. Mix well to combine all ingredients.

          Simmer: Bring the mixture to a boil. Once boiling, reduce heat, cover, and let it simmer for about 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.

            Incorporate Cheese: Stir in 1 cup of shredded cheddar cheese until completely melted and combined.

              Transfer to Casserole Dish: Pour the quinoa and beef mixture into a greased 3-quart (or similar size) casserole dish, spreading it evenly.

                Top with Cheese: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly on top of the casserole.

                  Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden.

                    Garnish & Serve: Remove from the oven, let it cool for a few minutes, then garnish with fresh cilantro. Serve warm and enjoy!
