Cheesy BBQ Chicken Stuffed Peppers

4 large bell peppers (any color)

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. You can also slice them in half lengthwise for easier serving if you prefer.

      Mix the Filling: In a large mixing bowl, combine the shredded chicken, BBQ sauce, corn kernels, black beans, cheddar cheese, cream cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until all ingredients are well incorporated.

        Stuff the Peppers: Spoon the cheesy BBQ chicken mixture into each bell pepper, packing them lightly to ensure they're filled well.

          Arrange in Baking Dish: Place the stuffed peppers upright in a baking dish. If they wobble, you can slice a small amount off the bottom to create a flat surface.

            Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. This will help steam the peppers to soften them.

              Uncover and Add Cheese: After 25 minutes, remove the foil and sprinkle a bit more cheddar cheese on top of each pepper, if desired.

                Bake Until Golden: Return to the oven uncovered and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

                  Garnish and Serve: Remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with fresh cilantro if desired, and serve warm.
