Beef and Broccoli Stir-Fry with Rice

Ingredients
  

1 pound flank steak, thinly sliced against the grain

2 cups broccoli florets

1 cup bell peppers, thinly sliced (red or yellow)

1 tablespoon minced garlic

1 tablespoon minced ginger

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

2 tablespoons sesame oil (divided)

1 cup jasmine or basmati rice

2 cups beef or vegetable broth (for cooking rice)

Salt and pepper to taste

Sesame seeds (for garnish)

Chopped green onions (for garnish)

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak, 1 tablespoon soy sauce, 1 tablespoon cornstarch, and a pinch of salt and pepper. Mix well and let it marinate for about 15-30 minutes.

    Prepare the Rice: Rinse the rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and beef/vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for 15-20 minutes until the rice is fluffy and liquid is absorbed. Once cooked, remove from heat and fluff with a fork.

      Cook the Beef: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Once hot, add the marinated beef in batches if necessary (to avoid overcrowding) and stir-fry for about 2-3 minutes until browned. Remove the beef from the pan and set aside.

        Sauté Vegetables: In the same pan, add 1 tablespoon of sesame oil, garlic, ginger, and bell peppers. Stir-fry for 1-2 minutes until fragrant, followed by the broccoli florets. Stir-fry for another 3-4 minutes until the broccoli is bright green and tender-crisp.

          Combine: Return the cooked beef to the pan with the vegetables. Add the remaining soy sauce, oyster sauce, hoisin sauce, and 1 tablespoon of sesame oil. Mix well to combine all ingredients and heat through for about 2 minutes, allowing the flavors to meld.

            Serve: Plate the cooked rice and top with the beef and broccoli stir-fry. Garnish with sesame seeds and chopped green onions for an extra pop of flavor!
