Baked Chicken Parmesan with Mozzarella

4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Italian seasoned)

1 cup grated Parmesan cheese

1 cup marinara sauce (store-bought or homemade)

2 cups shredded mozzarella cheese

2 tsp garlic powder

1 tsp onion powder

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Olive oil spray

Preheat Oven: Start by preheating your oven to 400°F (200°C). Prepare a large baking sheet by lining it with parchment paper or lightly greasing it with cooking spray.

    Prepare Chicken: If your chicken breasts are thick, consider pounding them to an even thickness for more uniform cooking. Season both sides with salt, pepper, garlic powder, onion powder, dried oregano, dried basil, and red pepper flakes for a slight kick.

      Create Breading Station: Set up a three-bowl breading station. In the first bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, mix the breadcrumbs and half of the grated Parmesan cheese together.

        Coat the Chicken: Dredge each chicken breast in the flour, shaking off the excess. Dip it into the beaten eggs, letting any excess drip off. Finally, coat it with the breadcrumb mixture, ensuring it is well covered. Place the breaded chicken onto the prepared baking sheet.

          Bake the Chicken: Lightly spray the tops of the breaded chicken breasts with olive oil spray to help them crisp up. Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and the breading is golden brown.

            Add Sauce and Cheese: Once the chicken is cooked, remove it from the oven. Spoon marinara sauce over each piece, then top generously with shredded mozzarella cheese and the remaining grated Parmesan.

              Final Bake: Return the chicken to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

                Serve: Once done, take the chicken out of the oven and let it rest for a few minutes. Garnish with fresh basil leaves if desired. Serve hot with your favorite pasta, salad, or crusty bread.
