Baked Brie with Apples

1 large wheel of Brie cheese (about 8 ounces)

2 medium apples (such as Granny Smith or Honeycrisp), thinly sliced

1/4 cup brown sugar

2 tablespoons unsalted butter

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 cup chopped walnuts (or pecans)

1 tablespoon maple syrup

1 tablespoon lemon juice

1 sheet of puff pastry (thawed)

1 egg (for egg wash)

Fresh thyme leaves (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Apples: In a skillet over medium heat, melt the butter. Add the sliced apples, brown sugar, cinnamon, nutmeg, lemon juice, and walnuts. Cook for about 5-7 minutes, stirring occasionally, until the apples are tender and caramelized. Stir in the maple syrup and remove from heat.

      Prepare Puff Pastry: On a lightly floured surface, roll out the puff pastry to make sure it's evenly thin. If using store-bought, you can lay it out as is.

        Assemble the Brie: Place the wheel of Brie in the center of the puff pastry. Top it generously with the caramelized apple and walnut mixture.

          Wrap the Brie: Fold the puff pastry over the Brie, wrapping it snugly. Trim any excess pastry and crimp the edges to seal. You can use the scraps to cut out decorative shapes to place on top of the wrapped Brie.

            Egg Wash: Beat the egg in a small bowl and brush it over the puff pastry to give it a nice golden color while baking.

              Bake: Place the wrapped Brie on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and flaky.

                Rest & Serve: Once baked, remove from the oven and let it rest for about 10 minutes. Garnish with fresh thyme leaves before serving.
