Apple Cinnamon Streusel Loaf Cake

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp nutmeg (optional)

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup buttermilk (or milk with a splash of vinegar)

2 cups apples, peeled and diced (about 2 medium apples)

3/4 cup brown sugar (for streusel)

1/3 cup all-purpose flour (for streusel)

1 tsp ground cinnamon (for streusel)

1/4 cup cold unsalted butter, cubed (for streusel)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper for easy removal.

    Whisk the Dry Ingredients: In a large bowl, whisk together 2 cups of all-purpose flour, baking powder, baking soda, salt, 1 tsp of ground cinnamon, and nutmeg (if using). Set aside.

      Cream Butter and Sugar: In another bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, until well combined.

          Combine with Dry Ingredients: Gradually add the dry mixture to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined.

            Fold in Apples: Gently fold in the diced apples until evenly distributed throughout the batter.
