Ingredients

1 (8-10 lb) fully cooked bone-in ham

2 cups apple cider

1 cup brown sugar

1/2 cup Dijon mustard

1/4 cup apple cider vinegar

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon ground nutmeg

1/4 teaspoon black pepper

4-5 sprigs fresh rosemary (for garnish)

1/2 cup diced apples (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C).

Prepare the Ham: Place the ham on a large roasting pan. If the ham has a skin or skin layer, carefully score it in a diamond pattern about 1/2 inch deep. This will help the glaze penetrate the meat.

Make the Glaze: In a medium saucepan over medium heat, combine the apple cider, brown sugar, Dijon mustard, apple cider vinegar, ground cinnamon, ground cloves, ground nutmeg, and black pepper. Bring the mixture to a simmer, stirring constantly, until the sugar has dissolved and the glaze thickens slightly, about 10 minutes.

Glaze the Ham: Brush the glaze generously over the surface of the ham, making sure to get it into the scored sections. Reserve some glaze for basting.

Roast the Ham: Cover the ham loosely with aluminum foil and place it in the preheated oven. Roast the ham for 1 1/2 to 2 hours (approximately 15 minutes per pound), basting every 30 minutes with the reserved glaze. Remove the foil for the last 30 minutes of cooking to allow for caramelization.

Finishing Touches: When the ham is heated through and the glaze is caramelized and sticky, remove it from the oven. Let it rest for about 15-20 minutes before slicing.

Garnish and Serve: Transfer the ham to a serving platter. Garnish with fresh rosemary sprigs and diced apples if desired. Serve warm with your favorite side dishes.
