8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/4 cup olive oil

1/2 tsp red pepper flakes (optional)

Zest of 1 lemon

Juice of 1 large lemon

Salt and black pepper to taste

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

    Sauté the Shrimp: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and red pepper flakes, sauté for about 1 minute until fragrant.

      Cook the Shrimp: Add the shrimp to the skillet and season with salt and black pepper. Cook for 3-4 minutes, turning occasionally, until the shrimp are pink and opaque.

        Add Lemon & Tomatoes: Reduce the heat to low. Stir in the lemon zest, lemon juice, and halved cherry tomatoes. If needed, add a splash of the reserved pasta water to create a light sauce.

          Combine Pasta & Sauce: Add the drained pasta to the skillet and toss everything together until the pasta is well coated. If the mixture seems dry, add more reserved pasta water, a little at a time, until the desired consistency is reached.

            Finish & Serve: Remove from heat, stir in the chopped parsley, and adjust seasoning if necessary. Serve hot, topped with grated Parmesan cheese.
